Ingredients

  • 1 jar of Tully'z Coconut Masala Curry Sauce
  • 2 cups basmati rice, cooked
  • 300g chicken breast or thigh, diced
  • 1 cup green peas (fresh or frozen)
  • 1 small onion, finely sliced
  • ¼ cup unsalted cashews (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons freshly chopped coriander

Instructions

  1. Heat olive oil in a deep non-stick frying pan over medium heat.
  2. Add the sliced onion and cook until soft and golden.
  3. Add the diced chicken and pan-fry until fully cooked.
  4. Stir in the entire jar of Tully’z Coconut Masala Curry Sauce and green peas, then cover and simmer for 5 minutes.
  5. Mix in the cooked basmati rice and stir until well combined.
  6. Remove from heat and garnish with fresh coriander and cashews.
  7. Serve hot with Greek or coconut yoghurt and a squeeze of lime.
