Ingredients

  • 1 jar of Tully'z Rogan Josh Curry Sauce
  • 3 x 250g packets of microwaveable rice (or 5 cups cooked rice)
  • 1 can chickpeas, drained and rinsed
  • 100g (1 cup) green peas (fresh or frozen)
  • 200g (2 cups) diced chicken, mushrooms, or tofu (2cm cubes)
  • 25g (¼ cup) roughly chopped unsalted cashews (optional)
  • 15g (¼ cup) finely chopped fresh coriander
  • 2 tablespoons olive oil

Method

  1. Cook the basmati rice according to package instructions (optional).
  2. Heat the olive oil in a large pan over medium heat.
  3. Add the cauliflower florets and cook for 5-7 minutes until slightly tender.
  4. Pour in the Tully'z Rogan Josh Curry Sauce and cook for 10-12 minutes, allowing the cauliflower to absorb the sauce and soften.
  5. Stir in the Greek yoghurt and cook for another 2-3 minutes to combine.
  6. Serve the curry over basmati rice (optional) and garnish with fresh coriander.
