Instructions:

  1. Heat the olive oil in a large, deep non-stick frying pan over medium-high heat.
  2. Add the diced eggplant and cook for 5 minutes, stirring occasionally, until partially cooked but still firm.
  3. Stir in the entire jar of Tully'z Tikka Masala Curry Sauce, the chickpeas, and the tomato ketchup.
  4. Cover and cook for another 5 minutes on medium heat, allowing the flavours to meld.
  5. Remove the lid and mix in the fresh coriander.
  6. Serve hot with rice, roti, or naan.
